Rich in flavours and spices, the convivial cuisine proposed by star-rated chef Akrame Benallal explores the culinary treasures of the Silk Road. From Morocco to India via Azerbaijan (of which Shirvan is an old province), the dishes reflect many influences. Carefully decorated, the dining-room is open to the kitchen so that you can admire the ballet of the cooks. Spell-binding.

For the past few months, this well-known Argentinian restaurant in the capital has proposed a menu signed Mauro Colagreco, Chef of the 3-star Mirazur restaurant in Menton. The chance to (re)discover iconic dishes from his birthplace such as empanadas, tarta de cebolla and asado, grilled meat typical of Argentina.

Heading up Perception, a duo: Barnabé Lahaye in the dining area, Sukwon Yong in the kitchen. With Korea clearly in its sights - the chef's homeland -, the menu also borrows traditional codes of French cuisine. Roast veal served with stuffed eryngium, a Korean mushroom, is a perfect illustration.

The succcess of MAGNIV ("marvel" in Hebrew) is explained by its small and large dishes inspired by Israeli and Mediterranean cuisine orchestrated by Israeli-Moroccan chef Kobi Villot-Malka. But also by its bar one floor down, serving well-mixed cocktails every evening with riotous DJ sets.

Housed in the former Poste du Louvre, Doki Doki tempts the tastebuds with its iconic hand rolls, Japanese rolls of warm round rice with crisp Nori algae, served with raw fish. They are prepared on the spot, before your eyes, behind a monumental concrete bar, a great place to take your seat at all times of day.

For lunch and dinner, South Korean chef Kim Kwang-Loc prepares his irresistible "mandoo" on the spot (garnished Korean ravioli, a cousin to Japanese gyozas) and delights guests with his fish and beef tartars. Reservations essential, as this charming little restaurant only seats 12 guests! An intimate, exotic experience.

In the wake of the success of Balagan and Shabour, lchef Assaf Granit has opened a third address in Paris, in the Montorgueil neighbourhood. For his first address in France, the star chef of Peruvian cuisine, Gaston Acurio, has seen big. Drouot's former auction room, treated to a metamorphosis by talented interior architect Laura Gonzales, now plays host to Manko: a restaurant, cocktail bar and cool club. An address that has taken off in Paris's Golden Triangle.
